Italian Tuna Sandwich Spread
¼ cup sundried tomatoes; drained and sliced
¼ red onion; chopped
12oz. tuna; chilled, juice drained and flaked with fork
1 rib celery; chopped
¼ cup olives; sliced
1 Tablespoon capers; rinsed
¼ cup mayonnaise
1 teaspoon lemon zest
Juice ½ fresh lemon
2 Tablespoons fresh basil; chopped
Salt and pepper to taste (not too much; the capers yield some salt)
Delicious on fresh or toasted bread.
